The detection of traces of the bird flu virus, specifically the Highly Pathogenic Avian Influenza (HPAI) strain, in pasteurized cow milk in the United States has sparked concerns regarding the potential transmission of the disease to humans. However, experts have emphasized that the risk of widespread contamination through food consumption is minimal.
US authorities recently announced the discovery of bird flu viral particles in the cow milk supply during a large-scale study. Despite this finding, they assured the public that the samples posed no significant health risk to humans. It's noteworthy that an outbreak of HPAI has affected dairy cattle herds across the United States, with one reported human infection displaying only mild symptoms.

While the H5N1 strain of HPAI has led to significant poultry mortality during the ongoing wave, affected cows have not shown severe illness. The US Food and Drug Administration revealed that viral remnants were detected in milk samples from affected animals, as well as in the processing system and on retail shelves. These findings were uncovered through quantitative polymerase chain reaction (qPCR) tests, capable of identifying genetic material remnants of the pathogen, although the virus itself was rendered inactive by the heat of the pasteurization process.
The emergence of the bird flu A/H5N1 strain dates back to 1996, but since 2020, there has been a notable increase in contaminated bird populations, with a growing number of mammals also affected. In an unexpected development, both cows and goats were found susceptible to the virus in March, signaling a previously unrecognized risk for these animals.
Jean-Claude Manuguerra, Director of the Environment and Infection Risks Department at the Pasteur Institute in Paris, highlighted the rapid multiplication of the H5N1 virus in a cow's udder due to a new strain intermingling with local viruses in the United States. Despite this, infected cows have not displayed severe symptoms.
Regarding the pandemic risk, experts underscored that although the transmission of the bird flu virus to humans is plausible, the likelihood of widespread contamination remains low. Virologist Bruno Lina from Lyon hospital in southeast France emphasized that while there is a risk of isolated cases in both animals and humans, there has been no significant mutation of the virus to elevate pandemic concerns.
In terms of human health threats, US authorities reported a case of bird flu infection in a person working on a Texas dairy farm. However, the symptoms were mild, consisting only of an eye infection, following direct contact with a cow. Lina highlighted that while H5N1 infections can lead to severe respiratory illness in humans, the risk is significantly mitigated when consuming pasteurized milk, as pasteurization effectively destroys the virus.
Concerning raw milk consumption, experts noted that the stringent sanitary controls in place reduce the risk of infection, and there have been no documented cases of H5N1 infection through this route. Additionally, the latest virus strain identified in the United States differs from those circulating in Europe, where no H5N1 infections in cows have been reported thus far.
While vigilance is crucial due to the potential for rapid viral mutation, consumers are advised not to be unduly concerned, as the risk of infection through milk consumption, especially pasteurized milk, remains extremely low.
