Traditionally, tandoori dishes are prepared in a cylindrical clay oven known as a tandoor, heated to high temperatures using wood or charcoal. 1. Tandoori Chicken

Ingredients:
- 1 Whole Chicken, cut into halves
- 1 tbsp Ginger Garlic Paste
- Salt to taste
- ½ tsp Lime juice
Second Marination:
- 1 tbsp Mustard Oil
- 2 tbsp Degi Red Chilli Powder
- ½ tsp Crushed Shahi Jeera (Caraway Seeds)
- ¼ tsp Cardamom Powder
- A pinch of Cinnamon Powder
- ½ tsp Black Pepper Powder
- ½ tsp Coriander Powder
- ½ cup Hung Curd
- 10 gms Soft Cheese
- ½ tsp Lime juice
- Salt to taste
- ½ tbsp Roasted Gram Flour
Method:
1. Marinate the chicken with ginger garlic paste, lime juice, and refrigerate for 1 hour.
2. Prepare the second marinade by mixing mustard oil, spices, hung curd, and cheese.
3. Marinate the chicken with the second marinade and let it rest for 2 hours.
4. Bake the marinated chicken for 35 minutes at 170°C.
5. Serve with green chutney and raita.
2. Veg Seekh Kebab

Ingredients:
- 2 tbsp Desi Ghee (plus extra for frying)
- Chopped Carrots, Cauliflower, Beans
- Spices: Red chilly powder, Coriander powder, Cumin, Salt, Roasted Cumin Powder
- Green chilly
- Method: Sauté vegetables in ghee, add spices, and shape into kebabs. Fry until golden brown.
3. Spicy Grilled Chicken Drumsticks
Ingredients:
- Dried red chillies
- Chicken drumsticks
- Salt
- Lemon juice
- Coriander seeds
- Chopped garlic
- Crushed black peppercorns
- Oil for greasing
Method:
1. Marinate drumsticks with salt and lemon juice.
2. Prepare a paste of spices and add to the chicken, marinate for 15-20 minutes.
3. Bake until fully cooked, garnish with mint, and serve.
4. Tandoori Aloo

Ingredients:
- Small-sized Potatoes
- Mustard Oil, Spices, Hung Curd, Roasted Besan
- Capsicum, Tomatoes, Onions
- Live charcoal + ghee for smoking
Method:
1. Pressure cook potatoes, peel, and cut into halves or quarters.
2. Mix mustard oil, spices, hung curd, and besan. Coat potatoes and veggies with the marinade.
3. Smoke with live charcoal, skew, and cook until crisp and golden brown.
5. Grilled Fish With Coriander Butter
Ingredients:
- Basa fish fillets
- Fresh coriander sprigs
- Butter, black peppercorns, salt, lemons
- Sea salt, red chilli flakes, olive oil
- Iceberg lettuce, arugula leaves
Method:
1. Make coriander butter, marinate fish, and grill until marked.
2. Arrange fish on a bed of lettuce and arugula.
3. Top with coriander butter roundels and serve.
