Getting kids to eat vegetables is something that every parent has to deal with. Some kids refuse to try vegetables, some push them aside, and others simply don’t like the taste. It can be very frustrating, but there are ways to sneak those healthy vegetables into their meals without them even knowing!
By adding vegetables to familiar dishes in a fun and tasty way, you can make sure your child gets the vitamins, minerals, and fiber they need to grow healthy and strong. Here are 5 simple and sneaky recipes that will help you hide vegetables in your child's meals — without the complaints!
Smoothies are one of the best ways to sneak in vegetables without your child noticing. With the right mix of fruits and veggies, you can create a sweet and creamy drink that is full of nutrients.
1 ripe banana (adds natural sweetness)
1/2 cup spinach or kale (mild greens)
1/2 cup frozen mixed berries (strawberries, blueberries, etc.)
1/2 cup Greek yogurt (for creaminess and protein)
1/2 cup orange juice or milk (for blending)
Add all the ingredients to a blender.
Blend until the mixture is smooth and creamy.
Serve immediately. You can add some ice cubes to make it even more refreshing.
Tip: The banana and berries will cover up the taste of spinach or kale, making it taste like a delicious fruit smoothie!
Zucchini is one of the easiest vegetables to sneak into baked goods, and these chocolate chip muffins do the trick perfectly. The zucchini adds moisture without changing the flavor, plus it gives a boost of fiber and vitamins.
1 1/2 cups all-purpose flour
1/2 cup grated zucchini (about one small zucchini)
1/2 cup chocolate chips (for sweetness)
1/4 cup honey or maple syrup (for sweetness)
1/4 cup vegetable oil
1 egg
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon vanilla extract
Pinch of salt
Preheat the oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
In a large bowl, mix together the flour, baking soda, cinnamon, and salt.
In a separate bowl, whisk the egg, honey (or maple syrup), vegetable oil, and vanilla extract.
Stir in the grated zucchini and chocolate chips.
Combine the wet and dry ingredients and mix until just combined.
Spoon the batter into the muffin cups and bake for 18-20 minutes, or until a toothpick comes out clean.
Tip: The chocolate chips make the muffins sweet and delicious, while the zucchini adds moisture and nutrients without being noticed.
Cauliflower is a great veggie to add to comfort foods like mac and cheese. Its mild taste and texture blend perfectly with cheese, so your child won’t even know it’s there.
1 medium cauliflower head, cut into florets
1 cup shredded cheddar cheese
1/4 cup milk
2 tablespoons butter
1 tablespoon flour
Salt and pepper to taste
Steam the cauliflower florets until they are tender (about 8-10 minutes).
In a separate saucepan, melt butter and whisk in the flour to make a roux (paste).
Gradually add milk while stirring to avoid lumps. Continue to cook until the mixture thickens.
Stir in the shredded cheese until it melts and becomes smooth.
Mash the cooked cauliflower until smooth, then mix it with the cheese sauce.
Combine with cooked pasta or serve as a cheesy cauliflower dish on its own.
Tip: The cauliflower will blend so well with the cheese that your child won’t even realize it’s there, and they’ll still get all the fiber and Vitamin C it offers.
Sweet potatoes are packed with nutrients like beta-carotene, which helps with eye health and boosts the immune system. Making them into fries is an easy and fun way to serve them, and kids love them!
2 medium sweet potatoes, peeled and cut into fries
2 tablespoons olive oil
1/2 teaspoon garlic powder
1/4 teaspoon paprika
Salt to taste
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Toss the sweet potato fries in olive oil, garlic powder, paprika, and salt.
Spread the fries in a single layer on the baking sheet.
Bake for 20-25 minutes, flipping halfway through, until crispy and golden.
Tip: The sweet fries are so tasty, your kids won’t mind the extra nutrition from the sweet potatoes.
Making your own pasta sauce is an easy way to hide vegetables like carrots, zucchini, and tomatoes. Blend these veggies into the sauce so your child gets extra vitamins and minerals without noticing.
1 can (15 oz) crushed tomatoes
1 small carrot, peeled and finely grated
1 small zucchini, finely grated
1 small onion, finely chopped
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon dried basil
Salt and pepper to taste
Heat the olive oil in a saucepan over medium heat.
Add the chopped onion and cook until softened (about 5 minutes).
Stir in the grated carrot and zucchini and cook for another 5 minutes.
Add the crushed tomatoes, garlic powder, basil, salt, and pepper.
Simmer the sauce for 15-20 minutes, stirring occasionally.
For a smoother texture, blend the sauce with an immersion blender, or leave it chunky, depending on your preference.
Tip: This veggie-packed sauce is great with pasta, rice, or even as a pizza topping. It’s an easy way to sneak multiple vegetables into your child’s meal!
