½ cup rava (semolina)
¾ cup sugar (adjust as needed)
½ cup ghee
2 cups water
A pinch of yellow food color (optional)
5–6 cashew nuts (chopped)
5–6 raisins
¼ teaspoon cardamom powder
First, heat 2 tablespoons of ghee in a pan. Add the rava and roast it on low heat. Keep stirring until it turns light golden and gives a pleasant smell. Take it out and keep it aside.
In the same pan, add the remaining ghee. Fry the cashew nuts and raisins until they turn golden. Remove and keep them aside.
Now add the chopped pineapple to the pan. Cook it for a few minutes until it becomes soft and releases its juice.
Carefully add water and let it boil. Slowly add the roasted rava while stirring continuously so that no lumps are formed.
Cook on low heat until the mixture starts to thicken. Add sugar, cardamom powder, and food color if you are using it. Mix well.
Continue cooking until the halwa leaves the sides of the pan and looks shiny. Garnish with fried cashews and raisins.
This halwa is soft, rich, and full of pineapple flavor. The rava gives it a smooth body, and the ghee adds warmth and aroma.
